Test Data Summary
The test results show that Combi’s are not high production steamers. For the price of one Combi you could get a double stack Sterling Steamer and one Convection oven and have about triple the cooking capacity. You would also have the advantage of redundancy. If one of the three units stops working you would still have two working units.
