Installation/Cleaning Tips
On autofill units there are sensors located in the bottom left side of the cooking chamber. It is important to keep these sensors clean. Make sure to specifically wipe the sensors off when wiping out the bottom of the steamer. The steamer should be drained and wiped out after every day of use.

When installing the steamer do not plumb the unit directly to a drain line. The fitting on the right is the drain and the fitting to the left is a condensate line. If the fitting on the right is plumbed then the condensate will drip onto the table or the lower steamer. There are rails for a 4 inch deep steam table to slide under the steamer. You can purchase a drip pan from Sterling with a hose attached in the black to run into the drain instead of using a drain pan if desired.

If cleaning the bottom of the steamer is neglected it could result in overheating and eventually warp the bottom of the cooking chamber. It is very important to clean the bottom of the cooking chamber daily.
